After almost 3 years of maturation on yeast lees in bottle, we have now launched our first Methode Champenoise sparkling wine.
This is a fine, dry and elegant style of sparkling wine produced from Heydon Estate’s exceptional single-estate Chardonnay. It offers a fresh bouquet of honeysuckle, citrus and honeydew melon. The palate reveals a deliciously fine and creamy bead, crunchy apple, nashi pear and citrus blossom with subtle hints of brioche, cashew nut and savoury lees character. It has a delicate mineral finish.
Pair with smoked salmon and cream cheese blinis, freshly shucked oysters and long brunches!

Visitors to the site can now download detailed Tasting Notes on all our current wines, as well as lists of Awards & Reviews. In time, we will also add Tasting Notes for past vintages for those customers that enjoy cellaring our wines.

Vintage 2019 was a cool and labour-intensive season but the results were worth it for beautiful chardonnay, concentrated Sauvignon Blanc, spicy Shiraz and aromatic Cabernet Sauvignon.
Cooler than average temperatures during Spring and Summer, coupled with less sun and an increase in humidity during ripening made canopy management critical to mitigate disease pressure and optimise sun exposure for the fruit.
With these conditions, a fastidious and regular leaf plucking program was vital. The success of this enabled us to harvest ripe, clean fruit with slightly lower alcohol and great natural acidity.
Marri Blossom was non-existent throughout the region, similar to 2015, which resulted in bird pressure and a full netting program. Harvest started approximately three weeks later than the last 10 year average in mid to late February.
Chardonnay was picked with slightly lower alcohol, high acidity and lovely flavour ripeness. Sauvignon Blanc blocks that were plucked and allowed to ripen with patience are looking fantastic. Shiraz has a cool climate spiciness to it, while Cabernet is rather aromatic with well-preserved colour due to no extremes of heat and long ripening allowing tannins to soften.
